Raspberry Scones

These raspberry scones are delicious! They are flavored with lemon and a hint of cardamom filled with raspberries and white chocolate chips!

– flour – sugar – baking powder –  salt –  unsalted butter –  heavy cream – 1 egg yolk – vanilla extract – cardamom (or cinnamon) – lemon zest – white chocolate chips  – raspberries (fresh or frozen)

Use your fingertips to rub the lemon zest into the sugar in a large bowl. Picture 1 below

Stir in the the dry ingredients and cold, cubed butter. Picture 2

Cut the cold butter in til butter is the size of peas. Stir in the white chocolate. Picture 3

Make a well in the middle. Pour in the egg yolk, 1/2 cup of the cold heavy cream and the vanilla. Picture 4

Use a fork to incorporate the cream into the rest of the ingredients. Picture 5

Turn dough out onto a clean surface. Lightly knead the dough til it comes together. Pat it into a 7 inch circle.

Slice into 8 triangles. Chill scones for 1 hour.

Brush with heavy cream. Bake at 400 F for 17-19 minutes. Drizzle with extra melted white chocolate, if you like!
