To a medium sized bowl, add the melted butter, buttermilk, vanilla, eggs, sugar, lemon zest and lemon juice. Whisk to combine.

Pour the wet ingredients into the dry ingredients and stir gently until just combined.

Stir in 3/4 plus 2 tablespoons of the strawberries and 1/4 cup of the strawberry jam until just combined (be careful not to overmix).

Spoon a tablespoon of batter into the muffin pan. Sread a tablespoon of the cream cheese mixture on top of the cupcake batter. Fill the rest of the cupcake liner with more of the muffin batter. Add the streusel on top of each muffin. Bake 23-27 minutes
