These Cherry Popsicles are an easy, healthy, refreshing summer treat! They're made with yogurt, filled with cocoa powder and sweet cherries and coated with chocolate. They are made with just 9 ingredients in 10 minutes of prep (plus freezing time)!
Pulse the yogurt, cream cheese, milk and vanilla, and sweetener of your choice in a blender or food processor until combined and smooth. Test/adjust sweetness.
Pour one cup of the mixture into a medium sized bowl and whisk in the cocoa.
Spoon the mixtures into the popsicle molds as you like. You can make some of the plain vanilla mixture and then a little chocolate or vice versa. Add 3-4 cherry halves to each mold.
Place the cover on and sticks inside and freeze 6 hours or overnight.
When ready to serve, run the molds under hot water for about 20 seconds or leave them out at room temperature for about 5 minutes to make it easier to remove them.
Melt the dark chocolate and coconut oil or shortening (if using). Dip the popsicles in the melted chocolate or drizzle them with chocolate. Set the popsicles on a tray lined with parchment paper. Freeze for a few minutes until chocolate hardens then enjoy!
Notes
Sweetness: After mixing the yogurt, cream cheese, milk and vanilla, give the mixture a taste and add sweetener until you achieve the degree of sweetness you like. Keep in mind that freezing dulls sweetness a tiny bit. Cherries: Add an additional 1/4 cup cherries if you like.Milk: Use almond milk or coconut milk in place of whole milk. Swirling: Use the popicle sticks to swirl the mixtures around a little, if you like. This will give you a cool design and will mix the flavors together nicely.Shortening/Coconut oil: The shortening or coconut oil can be omitted. The chocolate will stick better with it, but it can be omitted.Removing popsicles from mold: Leave popsicles out at room temperature for 5 minutes or run each individual popsicle mold under cool or warm water for about 20 seconds to make the popsicles easier to remove from the molds. I prefer using cool water. It takes longer, but doesn't melt popsicles as much. Storage: Store leftover popsicles in an airtight container in the freezer for up to 3 weeks.
