Chocolate s’mores cookies are chewy chocolate cookies with chocolate chips, marshmallows, graham crackers, and dark chocolate. They will satisfy cravings for both cookies and s’mores!
¼cupgraham crackers crumbsfrom about 1 full sheet, roughly crumble it up with your hands

Instructions
Preheat oven to 350 F.
In a medium sized bowl, whisk to combine the flour, cocoa powder, baking soda, baking powder and salt. Set aside.
In the bowl of an electric mixer with the paddle attachment or with a handheld mixer on medium speed, cream the butter and sugars for 2-3 minutes, until creamy and pale. Scrape down the sides of the bowl with a spatula.
Add the eggs one at a time with the mixer on medium speed. Add the vanilla extract.
With the mixer on low speed, slowly add the dry ingredients and mix until just combined. Using a spatula, stir in the 1/4 cup of graham cracker crumbs and the chocolate chips.
Use a 1-ounce cookie scoop to drop the cookies onto the cookie sheet. Place them 3″ apart. Press some graham cracker crumbs onto the sides and tops of each cookie and stick a few chunks of graham crackers and chopped dark chocolate on top
Bake 9 minutes. Remove from oven and carefully stick 2-4 marshmallows on each cookie. Place sheet back in oven and bake another 1-2 minutes or until the center is just set. Let cool on the baking sheet for 10 minutes before then transferring them to a rack to cool.
Notes
Chocolate:Use mini chocolate chips, chocolate chunks or chopped chocolate in place of regular chocolate chips. Use dark, milk, or white chocolate in place of semi-sweet chocolate. Peanut butter chips also work! Marshmallows: Regular sized marshmallows also work. Just be sure to cut them in half or in quarters before topping the cookies with them. Graham crackers: If you can't find graham crackers, use Lotus Biscoff cookies or plain digestive biscuits. Press the graham cracker crumbs on the tops AND sides of the cookie dough balls. You can also sprinkle the crumbs in the cookie scoop before scooping each cookie. You can add a few extra chunks of graham crackers when you add the marshmallows if you think they need more graham crackers. Oven temperature: Make sure your oven remains at 350 F before adding the second tray of cookies in the oven. The temperature could drop a bit when you open the oven door to take the tray out to add the marshmallows. Storage: Store leftover s'mores cookies in an airtight container at room temperature for up to 6 days. Store unbaked cookie dough in the refrigerator in an airtight container for up to 4 days.
