    These apple pop tarts are the perfect breakfast or dessert for fall and the holiday season! Use store bought puff pastry or pie crust or make your own. They’re filled with delicious apple pie filling and topped with a simple cinnamon icing.

    These cinnamon apple pop tarts make the perfect fall breakfast or dessert. They are made with store bought puff pastry or pie crust and a warmly spiced apple pie filling. Top them with cinnamon icing for the perfect fall treat!

    This apple pop tarts recipe is both easy and delicious. The filling can be prepared in advance and you can use store bought pie crust or puff pastry!

    I adapted this recipe using my phyllo dough apple turnovers and giant gingerbread pop tart house.

    Why You’ll Love This Recipe

    • You can make these apple pop tarts using homemade or store bought pie crust or puff pastry.
    • The filling is made with fresh apples and warm spices. It’s from scratch but only takes 20 minutes to make!

    Ingredient Notes

    Here are some useful notes on some of the ingredients needed to make apple cinnamon pop tarts.

    • Butter: Use unsalted butter.
    • Apples: Use three medium peeled, cored, chopped apples. Apples add both tart flavor and sweetness. I love baking with McIntosh, Granny Smith, and Honey Crisp. For another delicious apple recipe, try my apple cider cake recipe.
    • Cinnamon, nutmeg and ginger: Spices give these pastries their apple pie flavor. I used ground cinnamon and nutmeg and fresh ginger. Ground ginger can also be used. For another cinnamon and apple filled treat, check out my apple fritter bread!
    • Brown sugar: Use light or dark brown sugar for the filling.
    • Cornstarch: This helps to thicken the apple filling.
    • Pie dough: Make your own pie dough or use 2 sheets of store bought pie dough or puff pastry.

    Step by Step Instructions

    Here are the directions on how to make and bake this apple pop tart recipe.

    Step 1: (Photo one above) If you’re making homemade pie crust, use the pie crust from my giant pop tart recipe.

    Step 2: (Photo two above) Make the filling. Melt the butter in saucepan. Add the apples, lemon juice, spices and salt and cook until the apples begin to soften.

    Step 3: (Photo three above) In a small bowl, whisk together the cold water and cornstarch. Pour the mixture into the apples. Stir and cook for another 3 minutes until apple mixture thickens. Allow to cool slightly.

    Step 4: (Photo four above) Puree apple filling with an immersion blender, blender or food processor until smooth. Set aside.

    Step 5: (See photo five above). Roll one sheet of store bought pie dough or puff pastry into a 9 by 12 inch rectangle.

    Step 6: (Photo six above) Spread the filling evenly over the pie dough, leaving about a one inch border. Brush the edges of the bottom layer with egg wash.

    Step 7: (Photo seven above) Roll out second sheet the same as the first. Place the second crust over the bottom crust. Press the edges of the dough to seal the crusts together. Use a fork to crimp all the edges. Use a fork to poke holes throughout the top crust.

    Step 8: (Photo eight above) Brush pop tart allover with the egg wash. Bake at 375 F for 17-22 minutes or until golden brown. Allow to cool. Mix the glaze ingredients in a medium bowl. Spread the glaze over the pop tart.

    Expert Tips

    Tip #1: For a quick short cut, use 2 sheets of store bought pie crust or puff pastry instead of homemade pie dough.

    Tip #2: Prepare the filling in advance. Assemble and bake the pop tarts when you’re ready to serve it.

    Recipe FAQs

    Can I make individual pop tarts?

    Yes! You can make these into small gingerbread house pop tarts or just regular sized pop tarts. Roll the dough out to a rectangle about ⅛ inch thick. Cut the dough into 3 x 4 inch rectangles. Place a heaping teaspoon of filling in the middle. Leave about a 1/4 inch border.

    How do I slice this giant pop tart?

    Use a sharp knife to cut the pop tart. 

    How do I store leftovers?

    Store these apple pie pop tarts in an airtight container at room temperature for 2 to 3 days or in the fridge for 4 to 5 days. Reheat unfrosted apple pop tarts in the oven at 350 F for 7-10 minutes. Top with fresh icing.

    Ingredients
     

    Pop Tart

    • 2 pie crusts Make your own or use 2 sheets of store bought pie dough or puff pastry
    • 1 tablespoon (14 g) unsalted butter
    • 3 (546 g) apples cored, diced into ½ inch pieces
    • ⅓ cup (73.33 g) brown sugar light or dark, packed
    • 1¼ teaspoon (1¼ teaspoon) ground cinnamon
    • ¼ teaspoon (¼ teaspoon) ground nutmeg
    • 1 teaspoon (1 teaspoon) fresh ginger grated, or use 1/2 teaspoon ground ginger
    • ½ teaspoon (½ teaspoon) salt
    • 1 tablespoon (1 tablespoon) lemon juice
    • 1 teaspoon (1 teaspoon) vanilla extract
    • 1 tablespoon (8 g) cornstarch
    • 1 tablespoon (1 tablespoon) water

    Cinnamon Icing

    • 1 cup (120 g) powdered sugar
    • 1 teaspoon (1 teaspoon) cinnamon
    • 1 pinch (1 pinch) salt
    • 2-3 tablespoons (29.57 ml) milk or cream

    Instructions
     

    Pop Tarts

    • Melt 1 tablespoon of butter in a medium saucepan over medium heat. Add the apples and stir to coat. Add the vanilla extract, lemon juice, brown sugar, cinnamon, nutmeg, ginger*, and salt. Stir occasionally and cook 6-7 minutes, until apples begin to soften.
    • In a small bowl, whisk to combine the cornstarch and cold water. Pour mixture into the apples. Stir and cook for another 2-3 minutes until apple mixture thickens. Remove from heat. Allow to cool then puree using an immersion blender, blender or food processor. Puree til smooth.
    • Preheat oven to 375 F. Line a rimmed baking sheet with parchment paper. In a small bowl, prepare the egg wash by whisking the egg with 1 tablespoon of water. Set aside.
    • On a well floured surface, roll one sheet of pie dough or puff pastry into a 9" x 12″ rectangle. Carefully roll the dough around your rolling pin and then gently roll it out onto the prepared baking sheet.
    • Brush the edge of the crust with a 1-inch border of egg wash. Spread the apple filling evenly over the crust. Leave a 1 inch border.
    • Roll out second pie dough the same size as the first one. Carefully roll the dough around your rolling pin. Place the second crust over the bottom crust.
    • Gently press the edges of the dough with your finger tips to seal the top and bottom crusts together. Use a fork to crimp the edges. Use a fork or a toothpick to poke holes throughout the middle of the pop tart. These holes will allow steam to escape while the pop tart bakes.
    • Brush the pop tart allover with the remaining egg wash. Bake for 17-22 minutes or until golden brown. Allow the pop tart to cool on the baking sheet for a few minutes then carefully transfer it to a wire rack to cool completely.

    Cinnamon Icing

    • Combine all the ingredients for the icing in a medium bowl. Whisk til smooth. The icing should be somewhat thick but a little runny so that it's easily spreadable. Spread the cinnamon icing over the cooled pop tart. Use a long, sharp knife to slice in 8 equal pieces.

    Pie Dough: Use homemade or 2 sheets of store bought pie dough or puff pastry. 
    Ginger: Use 1 teaspoon freshly grated ginger or 1/2 teaspoon ground ginger. 
    Apples: Use three medium peeled, cored, chopped apples. I prefer McIntosh, Granny Smith, and Honey Crisp.
    Storage: Store these apple pie pop tarts in an airtight container at room temperature for 2 to 3 days or in the fridge for 4 to 5 days. Reheat unfrosted apple pop tarts in the oven at 350 F for 7-10 minutes. Top with fresh icing.

      We tried this and really like it but want more of an “apple” flavor to it. We are in Portugal and I don’t have access to HoneyCrisp or Jonagolds, so I use 2 granny smiths and one pink lady. Other suggestions?

      Absolutely delicious. Way better than a pop tart ever dreamed about being. I was lazy and used store bought dough and didn’t shape it into a square so it looks like a giant ravioli but it does work in a circle as well and we cut it like a pizza. Will make again!

      A new family favorite! We went heavy on the cinnamon, didn’t completely purée apples, and used crescent rolls for the dough. Planning to use something different for the shell next time to change it up, but did love how the first one turned out! A perfect Fall treat 🍎

      This came out so good! I used pie crust but I intend to make it again and try it with making my own homemade version of crust or puff pastry just to see which option I like better but the apple filling, I wouldn’t change a thing!

        Hi Katie! Thank you so much! I haven’t tried making these with almond flour unfortunately, so can’t say how that would work. One option would be tolook for an almond flour crust recipe (for two pie sheets) and use this filling and icing recipe. Hope that helps and please let me know if you have any other questions!
