    Marble Confetti Bundt Cake

    Why This Recipe Works

    • This cake is super fun and impressive! It has a pretty chocolate swirl and is filled with rainbow sprinkles!
    • It is made with buttermilk which makes it so moist!
    • Chocolate lovers will love this vanilla and chocolate cake covered in chocolate sauce! The chocolate sauce really intensifies the chocolate flavor of the cake!

    Instructions

    These instructions will tell you how to make a confetti bundt cake.

    1. Preheat the oven and prepare your Bundt pan.
    2. Make the chocolate layer by bringing the water, cocoa powder, sugar to a simmer in a small saucepan. Stir to combine. Remove from heat and stir in the chocolate until melted. Set aside to cool slightly while you prepare the vanilla cake batter.
    3. Combine the dry ingredients. Set aside.
    4. In a medium sized bowl, combine the eggs, sugar, buttermilk and vanilla and oil. 
    5. Stir the wet ingredients into the dry just until smooth. Pour 1 1/4 cup of batter into a medium bowl. Mix in the chocolate mixture. Add sprinkles to the chocolate layer if desired.
    6. For the remaining vanilla batter, carefully stir in the rainbow sprinkles. Do not overmix or else the sprinkles may bleed.
    7. Pour half of the vanilla mixture into the bottom of the bundt pan. Spoon the chocolate mixture over the vanilla layer. Do not stir the layers. Spoon the remaining vanilla batter over the chocolate layer. Swirl the batter around in a zig zag pattern using a butter knife. Go around the pan three times. Be careful not to overmix. 
    8. Bake for 45 to 50 minutes or until a toothpick comes out clean when inserted in the cake. Cool completely before glazing. 
    9. Make the chocolate sauce. Combine the melted butter, cocoa powder, powdered sugar, and warm water and vanilla extract. Stir until the mixture is smooth and combined. Drizzle the chocolate sauce over the cooled Bundt cake.
    10. Top with more sprinkles! 

    Expert Tips

    • There are a few easy ways to drizzle the cake with chocolate sauce. You can pour it from a spouted measuring cup, drizzle it with a spoon, or fill a pastry bag or sandwich bag with a corner snipped off.
    • Use melted butter melted shortening or a a nonstick vegetable oil spray to grease your bundt pan.
    • wait til right when you’re ready to bake to grease your pan. If you grease it then let it sit, the grease will start to slide down the pan as it sits.
    • Handle the Heat has article called How to Prevent Bundt Cake from Sticking. They recommend sprinkling granulated sugar or almond flour in place of flour over the greased pan.

    How do you make buttermilk from regular milk?

    There is no perfect substitute for buttermilk, but you can make a decent substitute at home. Measure one cup of milk. Take out one tablespoon of the milk and add one tablespoon of either lemon juice or white vinegar. Stir and let the mixture stand for around ten minutes.

    What are the best sprinkles to use?

    When mixing sprinkles into batter, use the long and skinny sprinkles (also called jimmies). Using nonpareils (the tiny balls) in the cake batter isn’t recommended because they bleed their colors easily. I used rainbow sprinkles, but chocolate would a fun alternative since it’s a chocolate marble cake.

    Ingredients
     

    Marble Funfetti Bundt Cake

    • 1/2 cup (118.29 ml) vegetable oil or canola oil
    • 3 (3) large eggs room temperature
    • 2 3/4 teaspoons (2 3/4 teaspoons) vanilla
    • 1 cup (236.59 ml) buttermilk room temperature
    • 2 cups (250 g) all purpose flour
    • 3 3/4 teaspoons (3 3/4 teaspoons) baking powder
    • 1/2 teaspoon (1/2 teaspoon) salt
    • 1⅔ cups (300 g) granulated sugar
    • 1/2 cup (80 g) rainbow sprinkles add up to 3/4 cup to batter, depending on your preference
    • 2 ounces (56.7 g) semi-sweet chocolate chopped
    • 1/4 cup (59.15 ml) water
    • 1/4 cup (50 g) granulated sugar
    • 1/4 cup (21.5 g) cocoa powder

    FOR THE CHOCOLATE SAUCE

    • 1 tablespoon (14 g) unsalted butter melted
    • 2 tablespoons (10 g) cocoa powder
    • 1/2 cup (60 g) powdered sugar add an additional tablespoon powdered sugar if needed
    • 1 tablespoons (7.39 ml) warm water add an additional ½ tablespoon if needed
    • 1/2 teaspoon (1/2 teaspoon) vanilla extract

    Instructions
     

    Marble Funfetti Bundt Cake

    • Preheat the oven to 350 F. Butter and flour a 10 to 12-cup Bundt pan.
    • Begin by making the chocolate layer. In a small saucepan over medium heat, bring the water, cocoa powder, sugar to a simmer. Stir to combine. Remove from heat and stir in the chocolate until melted. Set aside. 
    • In a large bowl, combine the flour, baking powder and salt. Set aside.
    • In a medium sized bowl, whisk to combine the eggs, sugar, buttermilk and vanilla until combined. Whisk in the oil. 
    • Stir the wet ingredients into the dry just until smooth. Pour 1 1/4 cup of batter into a medium bowl. Mix in the chocolate mixture.
    • For the remaining vanilla batter, carefully stir in the rainbow sprinkles. Do not overmix or else the sprinkles may bleed.
    • Pour half of the vanilla mixture into the bottom of the bundt pan. As evenly as possible, pour the chocolate mixture over the vanilla layer. Do not stir the layers. Pour the remaining vanilla batter over the chocolate layer. Swirl the batter around in a zig zag pattern using a butter knife. Go around the pan three times. Be careful not to overmix. 
    • Bake for 45 to 50 minutes or until a toothpick comes out clean when inserted in the cake. Place the pan on a rack for 15 minutes. Remove cake from the pan and let cool completely on the cooling rack. Allow to cool completely before glazing. 

    Chocolate Sauce

    • Combine the melted butter, cocoa powder, powdered sugar, and warm water and vanilla extract. Stir until the mixture is smooth and combined. Drizzle the chocolate over the bundt cake. Sprinkle more sprinkles on top of the chocolate.
