    Croissant Ice Cream Sandwiches

    These croissant ice cream sandwiches are made with creamy ice cream sandwiched in a flaky, buttery croissant! You only need two ingredients, so grab your favorite ice cream and some croissants and whip these up in just five minutes!

    Croissant ice cream sandwiches are two favorite desserts in one: buttery, flaky croissants filled with creamy ice cream! Enjoy them toasted or frozen, with toppings or without!

    Croissant with ice cream is an elevated ice cream sandwich made with just two store bought ingredients! They come together with minimal effort and are frozen, decadent and delicious!

    Why This Recipe Works

    • Hot and cold: The contrast of warm croissants with cool ice cream is so delicious just like our affogato matcha! You can enjoy these croissant ice cream sandwiches cold or warm and toasted.
    • Two ingredients: The recipe is made with only two ingredients. Use store bought croissants and your favorite ice cream. Add toppings or enjoy ice cream croissant sandwiches as is.
    • Quick and easy: They only take five minutes to make. You can also prepare them ahead of time and keep them in the freezer for weeks. For another frozen treat, try my cherry popsicle recipe!

    Below are notes about the simple ingredients needed to make this recipe.

    • Croissants-Use plain all-butter croissants. You can get croissants from the grocery store or bakery. You could also use mini croissants (just add less ice cream)! If your croissants are extra big, you can cut them in half before or after assembling the ice cream sandwiches.
    • Ice cream-This easy recipe uses store-bought ice cream. Use your favorite flavor or flavors. Ice cream fans will also love this Oreo cookie ice cream.

    Subsitutions & Variations

    • Sprinkle slivered almonds or chopped nuts over the ice cream before toasting or freezing for some crunch.
    • Spoon or drizzle some lemon curd, hot fudge sauce, caramel sauce, or olive oil over the ice cream immediately after toasting or before freezing.
    • Sprinkle a little flaky sea salt over the ice cream.
    • For frozen ice cream sandwiches, press the sides of the ice cream in sprinkles or mini chocolate chips!
    • Sprinkle powdered sugar over your cold or toasted croissants right before serving!

    Instructions

    Croissant ice cream sandwiches can be enjoyed frozen or toasted!

    Step 1 (Photo 1 above): Preheat electric grill or panini press (if toasting). Slice croissants in half horizontally with a long, sharp serrated knife.

    Step 2 (Photo 2 above): Scoop some ice cream onto the bottom half. Spread it a little with the back of your ice cream scoop.

    Step 3 (Photo 3 above): Place the top half of the croissant on top. Enjoy as is or wrap tightly in plastic wrap. Place in a freezer safe bag and freeze until ready to serve. For toasted croissants, place croissant in a panini press.

    Step 4 (Photo 4 above): Grill briefly for 15-20 seconds then enjoy immediately!

    Expert Tips

    • Try not to cut croissants all the way through. They hold together better if they’re not cut through.
    • The amount of ice cream you use depends on the size and shape of your croissants and your preference. I used about 1/2 cup or enough to cover the inside of my croissant.
    • Make one ice cream sandwich at a time. Toast it right away or place it in the freezer right after it’s assembled. Don’t assemble the whole batch then freeze. They will melt by the time you’re finished.
    • If you’re toasting your croissants, serve immediately.
    • Use croissants from the bakery if possible. They have the best taste!

    Recipe FAQs

    Can I double this recipe?

    Yes! You can make this recipe using regular or mini croissants. You can also use large croissants and cut them in half to make two servings. The amount of ice cream you add to each sandwich is up to you. I generally use 1/2 cup per regular sized croissant.

    Does the ice cream melt when you toast them?

    No! Amazingly, the ice cream stays frozen. The croissant gets warm, toasty and extra flavorful. Make sure to only toast them for 20 seconds or less and to eat them immediately after toasting!

    Can I make croissant ice cream sandwiches in advance?

    Yes! You can assemble these in advance. For frozen croissants, freeze them til you’re ready enjoy them. If you’re planning to toast them, you can assemble them then freeze them for up to 48 hours. Do not toast them until right before serving.

    Ingredients
     

    • 2 (2) croissants
    • 1 cup (132 g) ice cream very cold, any flavor or brand

    Instructions
     

    Toasted Croissant Ice Cream Sandwiches

    • Preheat a double sided electric grill or panini press (if toasting).
    • Slice croissants in half horizontally. Set aside.
    • Use a spoon, ice cream scoop or cookie scoop to place ⅓ cup to ½ cup of ice cream onto the cut surface of the croissant.
    • Fold over the croissant to sandwich the ice cream in the middle.
    • Place the croissant in the preheated electric grill and press down gently. Toast for 15-20 seconds.
    • Remove from grill. Enjoy as is or open and drizzle ice cream with any toppings. Place top half back on and dust with powderd sugar (optional). Enjoy right away!

    Frozen Croissant Ice Cream Sandwiches

    • Slice croissants in half horizontally. Set aside.
    • Use a spoon, ice cream scoop or cookie scoop to place ⅓ cup to ½ cup of ice cream onto the cut surface of the croissant. Sprinkle nuts, mini chocolate chips, chopped nuts or flaky sea salt over the ice cream. Drizzle with any toppings you like (hot fudge sauce, caramel sauce, lemon curd, or olive oil). Fold over the croissant to sandwich the ice cream in the middle.
    • Instead of putting toppings in the middle, you can fold over the top half of the croissant then press the sides of the croissant into some chopped nuts or mini chocolate chips so that they stick on the ice cream.
    • Enjoy immediately or wrap tightly with plastic wrap and store in a freezer safe bag until ready to serve.

    Notes

    Ice Cream: Use any ice cream flavor. You don’t need to soften the ice cream before scooping. The amount of ice cream you use depends on the size of your croissants and your preference. I used about 1/2 cup or enough to cover the inside of my croissant.
    Croissants: Use regular or mini croissants from the grocery store or bakery. I recommend plain, all butter croissants. 
    Serve as is, frozen or toasted: You can slice croissants, fill them and enjoy. You can also assemble them, freeze them for up to 48 hours then serve frozen. You can also fill them with ice cream then immediately toast them and serve them right away! 
    Slicing Croissants: Use a long serrated knife and back and forth sawing motion to slice croissants. Try not to croissants all the way through. They will hold together better if they’re not cut through.
    Assembling: Have everything you need on the counter before you take your ice cream out of the freezer. Make one ice cream sandwich at a time. Toast it right away or place it in the freezer right after it’s assembled. Don’t assemble the whole batch then toast or freeze. The ice cream will be too soft by the time you’re finished.
    Toppings: Drizzle some olive oil, hot fudge sauce, caramel sauce, lemon curd over the ice cream AFTER toasting. You can also sprinkle some chocolate chips, chopped nuts or flaky sea salt over the ice cream before or after toasting. Dust toasted croissants with powdered sugar right before serving.
