These chocolate strawberry brownies are extra chocolatey brownies with summery fresh strawberries topped with rich chocolate ganache! They’re filled with chocolate and bursting with fruity goodness in every bite.
Whether you’re hosting a summer barbecue, treating yourself to a cozy night in, or just craving something sweet, a brownie with strawberries is the perfect solution. And the best part? They’re easy to make!

Why We Love This Recipe
- Extra chocolatey: These are double chocolate brownies with chocolate ganache on top! They’re perfect for chocolate fans just like my Red Velvet Brownies!
- Fresh strawberries: Fresh strawberries add pops of fresh sweet fruit flavor to these brownies. Since it’s strawberry season, I had to try strawberries in brownies. - Perfect recipe: Strawberry chocolate brownies are the perfect Valentine’s Day recipe. These are also a big hit to bring to summer parties just like my white chocolate strawberry cookies.
Ingredients

Here are some useful notes on the ingredients needed to make strawberry brownies from scratch.
- Butter-Use unsalted butter. The butter is going to be melted, so it doesn’t need to be room temperature.
- Sweetened condensed milk– Sweetened condensed milk adds additional sweetness. It also adds fat and makes these brownies extra rich and moist! I use store bought sweetened condensed milk.
- Sugar-This recipe calls for both granulated and brown sugar. Use either light or dark brown sugar.
- Eggs– You’ll need 2 large eggs and 1 egg yolk. Make sure eggs are room temperature so they best incorporate into the batter.
- Strawberries-Strawberries make these chocolate strawberry brownies extra delicious! Strawberries taste so good with the chocolate. You’ll need 1 and 1/2 cup of fresh strawberries. Do not use frozen strawberries. If you love strawberries, try my strawberry cream scones and strawberry mousse.
- Semi-sweet chocolate chips and semi-sweet chocolate baking bars-We’re using semi-sweet chocolate chips in the brownies and 8 ounces of semi-sweet chocolate bars in the ganache.
- Heavy cream or heavy whipping cream: This is what we add to the chocolate for ganache!
- Freeze dried strawberries (optional): I like to add a little freeze dried strawberries for decoration. They look so pretty. They also give people a hint that these are chocolate and strawberry brownies.

Substitutions & Variations
- Instead of semi-sweet chocolate for the ganache, you can swap in a combination of dark chocolate and milk chocolate.
- Swap in additional semi-sweet chocolate chips in place of the chopped chocolate in the ganache.
- Use a box brownie mix in place of homemade.Bake them then top with the berries and ganache.
- I haven’t made this strawberry brownie recipe without eggs. For a naturally egg free dessert, try my sfouf cake or eggless chocolate chip cookies!
- Use a 1:1 substitute of gluten free flour to make these brownies with strawberries gluten free.
How to Make Strawberry Chocolate Brownies

Instructions

Step 1 (Picture 1 above)– Whisk the melted butter and sugar til smooth.
Step 2 (Picture 2 above)– Mix in the eggs and vanilla.
Step 3 (Picture 3 above)– Whisk in the sweetened condensed milk and melted chocolate.
Step 4 (Picture 4 above)– Stir in the flour, cocoa powder and salt. Stir in the chocolate chips.

Step 5 (Picture 5 above)– Pour batter into an 8 inch square pan. Bake at 350 F for 25-29 minutes.
TStep 6 (Picture 6 above)– Top cooled brownies with sliced strawberries.
Step 7 (Picture 7 above)– Place the chocolate in a heatproof bowl. Bring the heavy cream to a gentle simmer. Pour the heavy cream over the chocolate. Do not stir. Let stand 2-3 minutes then stir until the chocolate has melted and combined with the heavy cream.
Step 8 (Picture 8 above)– Pour the ganache over the strawberries. Spread evenly with the back of a spoon or an offset spatula. Top with chopped freeze dried strawberries. Refrigerate at least 30 minutes to allow ganache to set.
Expert Tips
Avoid overmixing. Overmixing lets more air into the batter and gives you cakey brownies.
Use a light colored metal pan. I wouldn’t recommend using a glass pan or a dark colored pan for these brownies with strawberries.
Chop the chocolate for the ganache as finely as possible. A large serrated knife works best for chopping the chocolate for ganache.
Use a long, sharp knife to slice brownies. For best results, run the knife under hot water and wipe dry between slices.
Recipe FAQs
It’s best to cut brownies when they have cooled completely. This allows the brownies to set and makes it easier to cut them.
Store these strawberry brownies in an airtight container in the fridge for up to 4 days. Freeze for up to 3 months.
Yes you can. I prefer making strawberry brownies from scratch, but you can use a store bought brownie mix if you like.

Brownies
- 1 cup (180 g) semi-sweet chocolate chips divided (½ cup melted, ½ cup folded in)
- 6 tablespoons (84 g) unsalted butter melted
- ¾ cup (150 g) granulated sugar
- 2½ teaspoons vanilla extract
- 2 large eggs room temperature
- ½ cup (118 ml) sweetened condensed milk
- ⅔ cup (83 g) all purpose flour
- ½ cup (43 g) unsweetened cocoa powder
- ½ teaspoon salt
Strawberry Topping
- 1½ cup (216 g) fresh strawberries sliced in thirds horizontally
Chocolate Ganache
- 4 ounces (113 g) dark chocolate finely chopped
- 4 ounces (113 g) milk chocolate finely chopped
- 1 cup (236 ml) heavy cream or heavy whipping cream
- freeze dried strawberries optional, for decoration
Instructions
Brownies
- Preheat the oven to 350 F. Line an 8×8 inch square pan with two strips of parchment paper. Leave an overhang on at least two sides.
- Melt 1/2 cup of the chocolate chips in the microwave, stirring every 15 seconds til melted. Set aside.
- Melt the butter in the microwave. Whisk the hot melted butter and sugar together for about 1 minute til smooth. Add the eggs and vanilla and whisk for 1 minute.
- Whisk the condensed milk and melted chocolate into the mixture til just combined.
- Use a spatula to stir in the cocoa powder, salt and flour. Avoid overmixing. Stir in the remaining 1/2 cup chocolate chips til just combined.
- Pour mixture into the prepared pan. Bake 25- 30 minutes. A toothpick inserted should come out with moist crumbs, not wet batter. Remove from oven and cool completely in pan.
Strawberry Topping
- Rinse strawberries and pat dry. Remove tops and slice berries horizontally into thirds, then gently pat the cut sides dry with paper towels before placing them in an even layer on top on the cooled brownies.
Chocolate Ganache
- Place the finely chopped chocolate in a heatproof bowl. Bring the heavy cream to a gentle simmer. Do not let boil. Pour the heavy cream over the chocolate. Do not stir. Let stand 2-3 minutes then stir until the chocolate has melted and combined with the heavy cream.
- Pour ganache evenly over the strawberries. Spread with an offset sptaula if needed. Sprinkle whole, chopped or crushed freeze dried strawberries over the ganache, if desired. Refrigerate for at least 30 minutes before slicing. Slice and enjoy!

I like to add about 50 grams of chopped dark chocolate on top, but this is optional. The brownies are delicious with or without it. Apologies again for the error.
